My week in food – peanut butter chocolate brownies

Okay so wasn’t super good this week.  But that did mean I could make these brownies.  They are more the cakey variety rather than the fudgy variety and I really do prefer the latter.  However, they were still fairly decent and though there were perhaps slightly dry but they weren’t too bad, especially with a nice cup of tea.  I thought these would also be pretty tasty mixed in with ice-cream and warm chocolate sauce …

Peanut Butter Chocolate Brownies

(recipe adapted from


  • 250g crunchy all natural peanut butter
  • 60 ml coconut oil (liquid)
  • 2 eggs
  • 1 tsp vanilla extract
  • 165g brown sugar
  • 85g wholegrain spelt flour
  • 30g cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • couple grinds of salt
  • 100g chocolate chopped (or choc chips)


  1. Preheat oven to 150°C and grease a baking tray(whatever mid-size one you have)
  2. In a large bowl mix together the peanut butter and oil, then add sugar, vanilla and eggs and beat together
  3. In a separate bowl mix together all dry ingredients and add to peanut butter mixture
  4. Stir in chopped chocolate (and feel free to pop a piece or two of chocolate into your mouth too).
  5. Spread batter evenly in pan and bake for about 25 minutes or until a toothpick comes out clean
  6. Cool on wire rack and cut into whatever size chunks you want.
