Happy first work day of the week

Here is a happy list for today:

  1. The sun is shining today
  2. It is only a four day work week
  3. Okay so I didn’t get as much of my essay done as planned but it is half way there (at least in terms of word count)
  4. English style picnic yesterday with friends.  The sky was grey but we still had a good time and made it inside before the rain started for some tea.  Below is a picture of my delicious (so delicious in fact I had 4!) rhubarb G&Ts made with my homemade rhubarb cordial
  5. Meeting Future Housemate for a catch-up
  6. Loving the twitter, who knew it could be so fun (follow me if you are also on it)

Rhubarb cordial

A few weeks ago I went to Bob Bob Ricard’s and had their rhubarb G&T which was lovely.  I thought this would be easy enough to repeat at home and then pondered about how I would do this.

Then while wandering through the world of pinterest I saw a recipe for rhubarb cordial.  This was the answer and just in time for a picnic planned for the bank holiday Monday.  So on Saturday I went off and bought two bunches of rhubarb.  I didn’t exactly use a recipe but used about 800 g of rhubarb (chopped), 1 cup fruit sugar and 3 cups water.  Let it boil and then simmer for about 15 until it looks rather unattractive and not at all like you are going to get that lovely pink colour that cooked rhubarb normally looks like.  Then strain and be pleasantly surprised when it is that lovely pink colour!  It made about 850 ml of cordial which is a decent way to a number of delicious summery G&Ts.

I was then left with a pile of rhubarb mush and wondered what on Earth to do with it.  I didn’t take a picture of it but it had a striking resemblance to something you would drag from the bottom of a rather murky pond.  As I was already in the baking mood I thought I would make a rhubarb loaf.  Unfortunately this didn’t end up too well.  It tasted good enough but was a bit too moist.  I won’t bother sharing the recipe but if anyone succeeds in trying this cordial and making something appealing with the leftovers let me know because I think I will definitely be making this again.
